Fakeaway: Red Thai Curry

Anyone who knows me, knows I absolutely love a curry! Whether it’s an Indian takeaway or a visit to our local Thai restaurant, Giggling Squid, it’s a firm favourite for me!

Although you can make good choices when you’re following Slimming World by avoiding creamy curries and deep fried chips, I’ve become a big fan of the ‘fakeaway.’ Put simply, it’s your favourite takeaway, made at home, without the added calories.

Today we’re focusing on the delicious Spicentice Red Thai Curry. If you haven’t heard of Spicentice then you’re seriously missing out! It’s a family run business, passionate about good food, and the simplicity of spice. I’ve tried a number of their spice kits, but this has to be one of my favourites, and perfect for a chilled Friday night in on plan!

The Spicentice spice kits are really easy to use and list out all of the ingredients you’ll need to accompany their kit to make the perfect curry (or meal depending on what you order). As with any meal, I started by prepping all of my ingredients before hand so I was ready to go. You’ll see from my picture below that the recipe is full of speed too (A Slimming World term – low calorie, filling veg (and fruit) which will aid weight loss, and should take up 1/3 of your plate) so perfect for all of you following the plan too!

What I loved most about this recipe was the fact that you made your own curry paste and how simple it was! You really have no excuse for using high-calorie, and let’s be honest, tasteless curry sauces! I just chucked everything in and gave it a wiz in my Nutribullet for the silky smooth paste I desired.

It was then a matter of cooking down the paste, before adding the coconut milk, chicken veg and any remaining ingredients, before leaving it to simmer until it was ready! I had some leftover spinach to use up too, so added that just before serving to give my meal some added speed! It really was as simple as that!

I served mine with some plain rice, a Naan bread (synned) to soak up all that extra sauce which was 100% worth it! Overall this curry worked out at 6 syns (without the Naan) because of the coconut milk (I used a half fat variety), however in my opinion, it was 6 syns well spent! Not only that, but my boyfriend loved it too!
